In my quest to eat homemade, healthy, natural, organic food I have been looking for recipes using less ingredients. Trying to recreate the best flavors and texture available. I reconize that these yummy frozen treats can be time consuming. I decided to go for a very easy and fast ice cream recipe.
So last week I attempted to make ice cream with : heavy cream (whipped = Chantilly), Greek Yogurt, lemon and sugar. 4 simple ingredients.
The results was above and beyong my expections or I should say my husband’s. After tasting it he declared that it was one of the best ice cream he ever had. As you may not know my husband is an ice cream, sorbet, gelato connoisseur. So I guess if it says this is good I believe him.
Here is the recipe. You can make this ice cream even if you do not have an ice cream maker. The whipped cream makes the ice cream to be nice and smooth.
Lemon Chantilly-yogurt ice cream: as light as a cloud
1 cup heavy whipping cream
½ cup powdered sugar
1 cup Greek yogurt 2%
½ cup sugar
4 tsp lemon juice
1 large organic lemon zest
In a large bowl whisk cream and powdered sugar until whipped cream become firm. In another bowl whisk yogurt with sugar, lemon juice and zest until having a very airy, light. Pour this mixture in the whipped cream bowl and very delicately with a large spatula incorporate the yogurt mixture.
Place in a ice cream maker and proceed as manual instruction or freezer in a container giving a stire every 30 minutes until set.
