I love Jujube, this is one of the healthiest snack you can find at a Farmer’s Market. I already wrote about it http://www.celinescuisine.com/?p=698

Jujube is a wonderful little fruit than can be eaten fresh or dried.  Last saturday when touring the Temecula with my 13 passionate sudents we all noticed at the Organic Salem Ranch booth some interesting bag with dried chopped Jujube calling for “Jujube Tea” recipe. I decided to add to our Farmer’s Market cooking class menu : French warm potato  and herbs salad, King Wild Alaskian Salmon and leeks tart, green salad with goat cheese and Crepes Suzette some Jujube Tea.

Actually the tea was delicious and sweet,  and really apreciae during the meal. Today is a cold and rainy day in Southern California, so I decided to make again this wonderful tea, here is the recipe (adapted from Salem Ranch Jujube tea)

1 Asian pear

1 slice Ginger

12 dried cujube chopped

1 Tbsp Trethowan Organic infusion tea or your favorite tea

8 cups water

Put jujube, pear and ginger in a large pot .Add the water and bring to a boil, simmer for 10 more minutes. Add the tea and let infuse for 5-10 minutes.

Enjoy!

    Another great recipe:

    1 pound of halved jujubes
1 asian pear (quartered, not peeled)
    3 cinnamon sticks
2 inches ginger root (sliced, not peeled)
    1 gallon of water

Bring it to a boil and let it simmer for 3-5 hours. Add more water when needed.

Makes the best tea, and you don’t have to add anything else to it.

I have about 60lbs of dried in the sun. How much do you sell them for?

Can they be kept in the freezer, since they seem to be seasonal?

they can be dried too…. never use in the freezer in So-Cal we found them all-year long. Where do you live?

Hi! Great recipe. We sell Jujubes at Southern California Farmer’s Markets, and I’m very pleased to see that someone has taken an interest in this wonderfruit! The average serving size of DRIED jujubes is 3.5oz. In that small amount, you get 13MG of Vitamin C, 530MG of Potassium, and all of that with under 1G of fat!

Come get some before we’re out until August! Thursday: Victorville/VVC, Friday: Apple Valley/Lion’s Part, Saturday: Corona and Irvine; at the University Center on Campus and Bridge, and Sundays in 29 Palms! Enjoy!
