My cookbook Cooking with Trader Joe’s – Pack a Lunch, has been released last month (also available at any Barnes and Noble bookstores).  This colorful cookbook is a part of  the ” Cooking with Trader Joe’s” serie and readers will discover easy, healthy lunchbox meals; ideas for re-purposing leftovers; favorite ready-made snack solutions; finger foods for camping, picnics and plane trips, and more — all using Trader Joe’s products.  Includes nutritional data and full-color photos (by Tia Black  Tia Black Photography for every 130 recipe, gluten-free icons and vegetarian.

    I love Trader Joe’s taboule and frozen chicken patties that are already cooked. I can heat them up in the microwave at work. I also like to bring a jar of Eggplant Garlic Spread and Savory Thin Mini Rice Crackers (Multiseed with Soy Sauce) in for a snack on the nights I work late. Unfortunately for me, my co-workers love them too and eat most of them!

    I love the cheese and chicken enchiladas in the frozen section. Tasty and soooooo easy to grab & go on the way out the door for work. Plus they’re a ton cheaper than going out to buy lunch and they keep me full all afternoon.

    When I went back to work a few months ago I bought a bento box with inserts. I love combing through pictures of bentos and experimenting on foods that are healthy and look beautiful when I open my box at lunch time.

    It makes everyone at work jealous and I love to sit down to a pretty, healthy AND delicious meal.

I offer myself up as the anti-market research fan because whatever I love most at TJs always gets discontinued, so if the company would just enlist me to try their products before they launch, I could save them a lot of trouble!

    Favorite portable lunch, where do I start! My kids love Tj’s broccoli slaw with cesar dressing. Add some cherry tomato, snap peas and edamame, so easy. They also love almond butter with Tj’s low sugar jam sandwiches.

    Well my lunches that I pack for work are pretty standard fare. Leftovers, a sandwich, some veggies and dip. Nothing too exciting (that’s why I really NEED the cookbook. I live in a small rural town and work in an even smaller little building with no microwave or fridge so that’s where I have to get creative.

    Hi. My favorite portable food is On the Go Oatmeal! I blend 2 cups oats, 1/2 cup chopped dates, 1 t cinnamon, and 3/4 t baking soda in my blender. Dump into a bowl. Add chocolate chips if desired. Now blend 4 very ripe bananas in the blender. Mix banana liquid with oat blend. Drop onto cookie sheet into 12 biscuits. Bake 350 for 25 minutes. Eat, Freeze, or Take on a Road Trip!
