Les Madeleines

Madeleine is my father’s favorite cookies. Tomorrow, November 1st is his birthday and it is always difficult for me to be away from my family’s birthdays. I am thinking of him, and I wanted to dedicate this simple so delicious recipe to him!

While I was in France this summer I bought madeleines-pan. You can find them in good cook stores.

What is a Madeleine cookie?This is a scallop-shaped soft and light French cookie immortalized by Marcel Proust in his autobiographical book “Á la recherche du temps perdu” (Remembrance of Things Past), where a taste of these cookies plunges Proust back into his childhood. Today Proust’s madeleine has become a metaphor in France for anything that creates a vivid memory.

My version has almond and orange in it, it make the cookie more dense and a stronger taste. These cookies are wonderful for tea -time or in your kids’ lunchbox or snack.

Orange & Almond Madeleines

2 large Organic eggs
2/3 cup Organic sugar
1 teaspoon Bourbon vanilla extract
1 teaspoon grated Organic Orange peel
1 pinch sea salt
½ cup Organic all-purpose flour
½ cup Almond meal or flour
10 Tbp unsalted Organic butter melted
Need: 2 madeleine pans (a metal mold with scallop-shaped indentations)

Preheat oven to 350°F Generously butter and flour pan for large madeleines
Using stand or hand mixer, beat eggs and 2/3 cup sugar in large bowl just to blend. Beat in vanilla, orange peel and salt. Add flours and beat until blended. Add slowly melted butter beating slowly until blended.
Spoon 1 tablespoon batter into each indentation in pan. Bake until puffed and brown, about 10-16 minutes. Cool 5 minutes.

    I love madeleines and will definitely try this recipe! Celine, I have a question. I have a lot of organic oranges that don’t have much taste/flavor. Do you have any ideas as to what to do with them? (I just didn’t want to throw away, if there is any other use…) Thanks!
