Winter Comfort Soup: Cabbage,Noodles, Mung beans and Peanut butter Soup

Finally winter arrived in Southern California. Call me crazy but I love it.  It is cold and rainy. Very rainy actually. I guess I can say  that I love it since it doesn’t affect my day since I am working from home. Some chai tea on my side listening to French radio station ” France Inter”  while I am working and do not have to go through crazy traffic caused by rain or Christmas shopping.

When we reach winter : soups, stews, chilis become a staple in our family for a while. I can eat soups for lunch and dinner and even sometimes breakfast.What I like about comforting soups, is that you can make them with almost anything handy you have. Today I decided to go to a soup full of nutrients and anti germs ingredients such as : ginger,garlic, onion, cabbage…cold and flu are surrounding us, everybody sounds sick. This recipe was out from the fridge-pantry…made in less than thirty minutes.

I sauteed the vegetables in the wok with some coconut oil then add  vegetables then water. Cooking a soup in a wok makes the process going super quick. The soup was a little bland so I decided to add more flavors I opted for peanut butter. And I can say the soup was perfect, comforting, tasty. Perfect for cozy say inside or may be great for an outdoor or skying hiking on the mountains.

Cabbage, miso and peanut soup

 

1 small onion chopped

1 Tbsp coconut oil

1 small cabbage chopped

1 inch ginger piece chopped

2 cloves garlic minced

1 cup rice vermicelli or pad thai noodles

1 tsp soy sauce

1 Tbsp miso paste

2 Tbsp creamy peanut butter

Cilantro chopped

3-4 cups water

 

Blanch the cabbage in boiling water  for 10 minutes. Drain well.

Soak noodles in boiling water for 2 to 3 minutes, drain and rinse with cold water. Set aside.

In a wok sauté onion in coconut oil, add the cabbage, garlic, ginger. Stir.  Add soy sauce and stir well. Saute until all ingredients are tender and soft. Add water stir. Simmer for 10 minutes.

Stir in peanut butter, mix well and add noodles.

Sprinkle cilantro. Serve immediately.
